Flourless Chocolate Cake Serves 8
 
Serves 8

Ingredients:
12 oz. Semi-Sweet Chocolate morsels
8 oz. (2 sticks) butter
2 cups sugar
6 eggs separated (whites one bowl, yolks one bowl)

Equipment:
3 clean stainless steel bowls
1 pot with boiling water
Electric mixer
1 9-inch Spring Form pan Parchment paper

Method:
Line the spring form pan with parchment paper and spray or grease the parchment.

Put the morsels and butter into bowl and place over the pot of boiling water. While the morsels and butter are melting combine 1 cup of sugar and egg yolks into a bowl and beat for 1 minute on medium speed. After the butter and morsels have melted add to the yolk mixture by folding chocolate mixture in.

Beat eggs whites until firm frothy peaks start to form, then gradually add remaining sugar and beat until firm peaks form.

Fold egg whites into chocolate mixture just until eggs whites are incorporated. Pour batter into spring form pan. Place into the oven and let cook for 35-40 minutes or until a toothpick inserted into the center comes out clean.

The cake can be served warm with fresh berries or sweet whipped cream or served cold with a sprinkle of powdered sugar.

NOTE: Cake will collapse and look like a pie and is very gooey.
