Chicken Marsala Fajitas with Feta Cheese

Serves 4
Ingredients:
2 tablespoons olive oil
4 boneless chicken breast halves, cut in thin strips
1-tablespoon cumin
2 teaspoons kosher salt
1 red onion julienne
3 cloves garlic minced
1⁄4 cup mushrooms sliced thin
3 jalapenos seeded and small diced
1 red bell pepper, seeded and cut in strips
1⁄4 cup Marsala wine
8-flour tortilla, warmed
1/2-cup feta cheese
2 tomatoes chopped
1 bunch green onions trimmed and sliced
Method:
Heat the oil in a sauté pan; toss the strips in the
cumin and kosher salt then cook the chicken strips over
high heat, stirring constantly, for 5 minutes, or until
cooked. Remove chicken strips and place on paper towels.
Add the red onion, garlic, mushrooms and jalapeno to the
pan and sauté over high heat for 2 minutes. Then add
Marsala and allow wine to reduce by half.
Return the chicken to the pan and heat until hot. Serve
right away, with warm tortillas, feta cheese, tomatoes
and green onions. Can also be served over hot cooked
brown rice and refried beans. |
